I know February ends today as does National Hot Breakfast Month but that doesn’t mean you can’t still have breakfast for dinner.  In our house its tradition to have Breakfast for dinner or lunch several times a month. It’s one of out favorite meals and for me has great meaning.

You see when I was kid growing up we didn’t have a lot of money. In fact before my mom met and married my step dad who I consider to be my daddy my mom was married to a not so nice man. He felt that his money was his and that it should be spent on him. This meant he gave very little to my mom to buy things for us kids like food so mom got creative.

There were many nights when we ate pancakes because back then you could make pancakes pretty cheap and we would eat them with homemade preserves on them. even though to most this would seem like a hardship for me it was some of my best memories sitting around the table gobbling up pancakes warm from the griddle as we talked and laughed.

Now I make breakfast for dinner because it’s easy and it’s a meal that I know my whole family will enjoy.

Breakfast For Dinner Menu Items

Some of they items we enjoy for dinner are things like:

  • pancakes
  • eggs
  • biscuits
  • gravy
  • chicken
  • fruit
  • grits
  • home fries
  • oatmeal

And the star of dinner my banana waffles.

Banana Waffles


  • 2 ripe bananas
  • 2 cups Krusteaz waffle mix
  • 1-2 cups water (depending of if you like your batter thin or thick)


  1. Mash rip bananas
  2. mix in waffle mix
  3. add water to desire consistency.
  4. Add mix to hot waffle iron and cook as directed on waffle iron.
  5. NOTE: Depending on size of waffle iron this will either make 2 large waffles or a couple small.

  5. My favorite are pigs in a blanket, where the pancake is rolled around a sausage link. Don’t find them on too many menus anymore so I usually make them at home.
